Make a totally Green Dinner

Everything in this meal is the color of Green including Broccoli Cheese Soup Lime & Soda Pop Jello Salad, Stuffed Green Peppers and Pistachio Desert.

Want to celebrate St. Patrick’s Day with a little whimsy that will either thrill or disgust your family. Serve an entirely green dinner. I’ll bet your kids will never forget this celebration!

Start out with a green soup. Broccoli cheese soup is naturally green so you shouldn’t need to use any food coloring. The taste of this soup is pretty strong so if you have young children that don’t like broccoli to begin with, it’s probably a good idea to skip this.

Broccoli Cheese Soup

Ingredients:

  • 1 – 16 ounce package frozen broccoli
  • ¼ teaspoon salt
  • 1 stick butter
  • 1 small onion, chopped
  • 1 cup water
  • 3 heaping teaspoons cornstarch
  • 1 can cream of celery soup
  • 1 can water
  • 6 cups milk
  • 1 pound Velveeta Cheese

Directions:

  1. Cook frozen broccoli as per package directions adding salt to the water.
  2. In a large saucepan melt butter and stir in onion. Sauté until translucent and tender.
  3. Add drained broccoli to the saucepan. In a cup stir cornstarch and 1 cup water.
  4. Add to broccoli mixture (this will start to thicken the mixture).
  5. Keep heat on low and add soup and 1 can water.
  6. When mixture starts to simmer (if it boils turn it to a simmer) add milk and cheese cut in chunks.
  7. Stir until cheese melts.
  8. You can serve it this way or put it in batches in a blender or food processor to make it smoother.
  9. Serve hot with garlic and cheese croutons on top.

Lime and Soda Pop Salad

The traditional lime jello salad usually had cottage cheese, mayonnaise, cream cheese, pineapple and other things in it that probably were never meant to go with lime jello. This salad is good and you make it with lemon lime soda.

Ingredients:

  • 1 – 3 ounce package lime Jello
  • 1 – 16 ounce can applesauce
  • 1 – 8 ounce can lemon-lime soda pop

Directions:

  1. In a saucepan heat Jello and applesauce until it bubbles.
  2. Pour into a glass bowl or Pyrex 8 x 8 inch casserole and add lemon-lime soda.
  3. Stir until combined.
  4. Chill in refrigerator until it gels. Do not use diet soda.

What other green main dish could you imagine? Stuffed Green peppers should do the trick. To make the mixture a little more green use food coloring in the rice.

St. Patrick’s Day Stuffed Green Peppers

Ingredients:

  • ½ cup cooked white rice
  • Green food coloring
  • 4 small green peppers
  • 1 medium onion, peeled and chopped
  • 1 pound ground beef
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ cup cracker crumbs (Ritz or Townhouse)
  • 1 can cream of celery soup
  • 1 can tomato soup

Directions:

  1. Cook rice per package instructions.
  2. Once it is done add enough food coloring to make the rice quite green.
  3. Set aside to cool.
  4. Cut peppers lengthwise, remove stem and take out all membrane.
  5. In a Dutch oven boil water and place peppers in.
  6. Boil for 8 minutes.
  7. Drain well and set aside to cool. In a bowl combine onion, beef, green rice, salt, pepper, crumbs, and half the can of both soups. Mix well.
  8. Stuff pepper halves with this mixture (it will be heaping).
  9. Place peppers in a greased baking dish.
  10. In a bowl combine the other half of the soups.
  11. You can add a little green food coloring to this too. Spoon over peppers.
  12. Bake in preheated 375 degree oven for 1 hour to 1-1/2 hours until thoroughly cooked.

Now for dessert. This is a wonderful pistachio flavored dessert that will have your salivary glands watering. If you would prefer you can make shamrock cut out cookies for the little ones. You can find that recipe byclicking here just change the Christmas motif to a St. Patrick ’s Day one and decorate your shamrocks with green royal icing and sprinkles. Pistachio Dream

Ingredients:

Crust:

  • ½ cup butter
  • ½ cup chopped pecans or pistachios
  • 1 cup flour
  • ½ teaspoon almond extract

Filling:

  • 1 – 8 ounce package cream cheese1 cup confectioners’ sugar2 – 3 ounce packages pistachio instant pudding (not cooked)
  • 3 cups milk
  • 1 teaspoon vanilla
  • 1 small container Non Dairy whipped topping

  1. Preheat oven to 350 degrees.
  2. Melt butter.
  3. Combine butter, nuts, flour, and almond extract.
  4. Mix well and pat into a 9 x 13 inch pan. Bake for 15 minutes. Cool.
  5. In a mixing bowl combine cream cheese and confectioner’s sugar with electric mixer.
  6. Pour this on top of the crust and smooth out.
  7. Chill for about 1 hour. In a bowl combine pudding, milk and vanilla.
  8. Whisk well and pour carefully over cream cheese layer. Chill for at least 4 hours.
  9. Before serving spread Non Dairy whipped topping over top and sprinkle with more nuts.
  10. Cut in squares and serve.
Serve your green dinner on St Patrick’s Day or make some Irish recipes or Irish stew. Celebrate the luck of the Irish!
