Kid Friendly and Healthy No Hassle Beef Stew

This beef stew recipe is not only kosher and super simple, it's perfect for those picky eaters who won't eat anything. And if they don't, you won't be frazzled.

Nothing is as frustrating as rushing home from a long day at work to cook a wonderful meal, or spending all of your so-called relaxing weekend slaving over a hot stove, to have your pickiest children look at it and say “Ew, what is it?”, the other one looking at you matter-of-factly and saying “I’m not eating that, no way”, and lastly – the one who eats everything sitting at the table for an hour picking at his food.

That’s why Super Simple Kosher Beef Stew is fabulous. It’s so simple, even the kids could make it. The most difficult part of the entire recipe is the peeling of the vegetables. And the best part? Even the pickiest eater, the one who won’t eat anything that’s not macaroni and cheese, especially if it has carrots in it, just might eat every last drop and even asked for more carrots!

And the other best part? It’s super simple! Put it up in the morning and when you get home, there’s no rush – dinner will be ready when you are, without the hassle.

Super Simple Kosher Beef Stew

  • 1 pound kosher beef stew meat cut in 1” chunks
  • 32 ounce carton organic vegetable broth
  • 3 cups cold water
  • 12-16 ounces fresh sweet potato
  • 12-16 ounces fresh yellow potato
  • 2 medium carrots
  • 1 large parsnip
  • ½ cup whole pearl barley
  • 2 teaspoons thyme
  • 2 teaspoons rosemary
  • 1 head of garlic, or equivalent powder, chopped garlic, etc
  • 1 bay leaf
  • 8 Tablespoons cornstarch and water, salt and pepper (put aside until the end)

  1. Wash and peel vegetables. Chop vegetables into approximately one inch pieces. They do not need to be exactly one inch or cut perfectly – just chop them into big bite size pieces and toss them into the bowl of the crock pot.
  2. Add all other remaining ingredients except the cornstarch and stir. If using fresh whole garlic, you can either peel it and add each clove whole or peel and chop.
  3. Turn crock pot on low, go to work, do your errands or anything else you need to do. Come back 7-9 hours later and stir. To cook stew in less time, set crock pot to high and come back to it after 5 hours.
  4. Remove vegetables and meat from crock pot with a slotted spoon. Mix cornstarch with equal amount of cold water and stir until smooth. Pour this into the juices in the crock pot. With lid off and crock pot turned to high, stir for 5-10 minutes until desired thickness. Remember, the stew will continue to thicken after the vegetables are mixed back in.
  5. Add salt and pepper to taste and return vegetables to crock pot. Stir and serve.
Crock pot alternative:

No crock pot? No problem! Prepare as above placing all ingredients in a heavy stock pot and cover with a lid. Place pot on stove on lowest simmer setting and follow remaining directions, checking after 5 hours.

Early Morning Time Saving Tip:

No time in the morning? Prepare everything the night before with all ingredients in the crock pot bowl and place crock pot bowl in the refrigerator. When you wake up, remove bowl from refrigerator, place in crock pot heating element, turn on crock pot, and go about the rest of your day.
