Combined with regular exercise and fulfilling hobbies, losing weight is easy and the results will be permanent!

The following recipe for Sweet and Tangy Chicken Tacos will forever change perceptions and pre-conceived notions of what it means to eat for weight loss.

Recipe For Sweet and Tangy Chicken Tacos

  • 2 Medium Chicken Breasts
  • 1/2 Cup of Cabernet Sauvignon
  • 1 Cup of Honey BBQ Sauce
  • 2 Tbs of Jelly (Plum or Strawberry)
  • 1 Drizzle of Honey
  • 2 Tsp of Chili Powder
  • 1 Tsp of Black Pepper
  • 1 Cup of Long Grain Brown Rice
  • ½ Cup of Salsa
  • 1 Cup of Water
  • 6-10 Small Corn Tortillas
  • Fat Free Sour Cream (if desired)

How To Make Sweet and Tangy Chicken Tacos

  1. Preheat the oven to 350 degrees. Boil the water in a small or medium saucepan over high heat. Once boiling, add the salsa and rice. Reduce heat to low. Cover and stir occasionally.
  2. While rice is cooking, prepare the chicken by trimming the fat and chopping into small cubes. Set aside.
  3. In a large frying pan, combine the wine, BBQ sauce, jelly, honey, chili powder, and pepper. Stir well.
  4. Add chicken and heat frying pan over medium-high heat, stirring moderately.
  5. Rice is done when all of the water has been absorbed, holes appear on the surface, and rice is thick and fluffy. Remove from heat.
  6. Chicken is done when the sauce is very reduced and bubbly. Remove from heat.
  7. Warm tortillas in preheated oven for 3-4 minutes at the most. Tortillas should be soft and pliable, never rubbery.

How To Serve Sweet and Tangy Chicken Tacos

Put the rice in one bowl, the sauce-covered chicken in another, each with its own serving spoon. Put the warm tortillas onto a small plate. Cover to maintain warmth. Spread two tablespoons of rice onto a tortilla. Add two tablespoons of chicken. Top with sour cream (highly recommended). Most importantly, enjoy!

Serves two. Each taco is 150 calories. This recipe was created by the author, Britt Warner, and tested successfully on some of the pickiest eaters. For more delicious recipes for weight loss, visit Britt Warner’s page.
