1 ½ lbs Steak (Sirloin or Skirt)
1/2 Cup of Cabernet Sauvignon
1 Cup of Honey BBQ Sauce
2 Tbs of Jelly (Plum or Strawberry)
1 Drizzle of Honey
2 Tsp of Chili Powder
1 Tsp of Black Pepper
1 Cup of Long Grain Brown Rice
½ Cup of Salsa
1 Cup of Water
6-10 Small Corn Tortillas
Fat Free Sour Cream (if desired)
How To Make Sweet and Tangy Steak Tacos
Preheat the oven to 350 degrees.
Boil the water in a small or medium saucepan over high heat. Once boiling, add the salsa and rice. Reduce heat to low. Cover and stir occasionally.
While rice is cooking, prepare the steak by trimming the fat and chopping into small cubes. Set aside.
In a large frying pan, combine the wine, BBQ sauce, jelly, honey, chili powder, and pepper. Stir well.
Add steak and heat frying pan over medium-high heat, stirring moderately.
Rice is done when all of the water has been absorbed, holes appear on the surface, and rice is thick and fluffy. Remove from heat.
Steak is done when the sauce is very reduced and bubbly. Remove from heat.
Warm tortillas in preheated oven for 3-4 minutes at the most. Tortillas should be soft and pliable, never rubbery.
How To Serve Sweet and Tangy Steak Tacos
Put the rice in one bowl, the sauce-covered steak in another, each with its own serving spoon.
Put the warm tortillas onto a small plate. Cover to maintain warmth.
Spread two tablespoons of rice onto a tortilla. Add two tablespoons of steak. Top with sour cream (highly recommended).
Most importantly, enjoy!
