The Heirloom Tomato and Blue Cheese Sandwich

The mixture of blue cheese, heirloom tomatoes and a hard crusted bread provides a hearty breakfast lunch or dinner on a cool Autumn or Winter day.

Whether it be a simple gorgonzola or a Stilton Blue, the type of blue cheese used for the sandwich is purely at the sandwich artist’s discretion. Because of the pungent nature of many blue cheeses, it is advised to use a mild blue (one with just a little mold and made of cow’s milk) if serving guests.

The Type of Bread

The balance of this sandwich rests on the saltiness of the blue cheese combined with the sweetness of the heirloom tomatoes and most importantly it must be “sandwiched” on a hard baguette or roll which is hard in texture. This is even a great sandwich for a day old baguette.

Things You’ll Need

  • Baguette
  • Blue cheese
  • Heirloom tomatoes
  • Fresh basil
  • Balsamic vinegar
  • Salt
  • Pepper
  • Knife
  • Cutting board
  • Toaster oven

Assembling the Sandwich

  1. Slice the bread length-wise in the same manner a sub is made.
  2. Slice the heirloom tomato into thin pieces.
  3. Lay the heirloom tomato across the bread.
  4. Apply or slice the crumbling blue cheese and rest it on top of the heirloom tomatoes.
  5. Roll several leaves of basil and slice them. Then sprinkle the basil on top of the blue cheese.
  6. Drizzle the sandwich with balsamic vinegar.
  7. Add freshly cracked salt and pepper to taste.
  8. Place the Blue Cheese Heirloom Tomato sandwich in the toaster oven for several minutes on moderate heat. (This is either a moderate setting on the “toasting function” or at 300 degrees for several minutes.) Stop the warming when the crust of the bread begins to significantly crisp and you notice that the blue cheese has melted.
  9. Remove from the toaster oven and allow to cool for 5 minutes before serving to guests.

Add a Little More Protein

The Blue Cheese Heirloom Tomato Sandwich can also be enhanced by adding sliced turkey, chicken or roast beef to the sandwich before slicing.

Drizzle a Favorite Salad Dressing

Using just balsamic vinegar greatly reduces the calories of this sandwich versus using olive oil. However a bit of olive oil, or your favorite olive oil based dressing can certainly enhance this sandwich as well.

Everything is Better with Avocado

High in the “good fats” Avocado makes a great addition to the Blue Cheese Heirloom Sandwich as well. However it is recommended that avocado be added after the sandwich has been in the toaster oven so that it does not dry out or brown.

Everything is also Better with Bacon

A few pre-cooked strips of bacon can really help bring out the saltiness of the blue cheese along with the sweetness of the heirloom tomatoes. Just be sure that the bacon is not too crisp before placing it in the toaster oven as it will continue to dry out while the rest of the sandwich is being heated.
