Three Tuna Recipes

These are three very different recipes, from easy preparation (pepper tuna) to more sophisticated preparation (marinated and onion tuna).

Although an excellent source of protein, tuna is not an eco friendly choice of fish. Indeed most species of tuna are declining in the oceans worldwide. In addition, most species have elevated levels of mercury, so do not eat tune too often. The best choice will be Albacore tuna from US pacific, Canada and Hawaii or yellow fish tuna from US Atlantic and Skipjack tuna found worldwide.

Pepper Tuna

Ingredients for 4 servings:

  • 4 tuna steaks (150 gr , 5 ounces each)
  • 3 tablespoons pink peppercorns
  • 3 tablespoons green peppercorns
  • 2 tablespoons black peppercorns
  • 1 lemon

Preparation:

  • Crush together pink, black and green peppercorns
  • Coat the four tuna steaks with the crushed pepper

Directions:

  1. Grill tuna over hot coals for barbeque or hot grill on the oven, for approximately 3 minutes per side. Adjust grill time depending of the size of the tuna stack. Avoid over cooking, tuna will become dry and toughen if overcooked.
  2. Serve immediately, with rice, potatoes or a green salad.

Marinated Tuna

Ingredients for 4 servings:

  • 4 tuna steaks (150 gr or 5 ounce each)
  • Half a cup extra virgin olive oil
  • 2 tablespoons vinegar (either sherry-wine or wine vinegar with raspberry juice)
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 small minced shallot
  • 1 small minced clove garlic
  • 1 teaspoon minced cilantro
  • ¼ teaspoon ginger powder
  • ¼ teaspoon minced jalapeno
  • 1 tablespoon sesame oil

Directions:

  • Wash fish steaks and pat dry with a paper towel.
  • Place as one layer, tuna in a large shallow pan.

Prepare the marinade:

  1. In a bowl, combine olive oil, vinegar, soy sauce, minced shallot, minced garlic, minced cilantro, ginger powder, minced jalapeno and sesame oil. Mix well.
  2. Pour half cup of marinade over the tuna steaks.
  3. Marinate for at least 2 hours. Tuna can be prepare the day before and marinated in the fridge. Turn tuna steak from time to time to ensure that tuna is well marinated on both sides.

Directions:

  1. Remove tuna from marinade.
  2. Grill until cook rare for 3 to 4 minutes each side. Avoid over cooking, tuna will become dry and toughen if overcooked. Adjust cooking time depending of the size of the tuna steak.
  3. Serve with rice.

Onion Tuna

Ingredients for 4 servings:

  • 4 tuna steaks (150 gr each or 5 ounces)
  • 8 big white onions
  • 8 minced black olice
  • 2 tablespoons extra virgin olive oil
  • salt pepper

Directions:

  1. Mince the onions.
  2. Pour olive oil in a pan and cook onion at medium heat for 5 minutes then reduce heat and continue cooking for 20 minutes. Onions should be transparent and not grilled.
  3. Keep cooked onions aside.
  4. In the same pan cook tuna for 3 minutes each side. Add onions and minced black olive and cook for 1 minute.
  5. Serve immediately.
