Turkey leftovers are half the fun of holiday meal planning. Soups, sandwiches, casseroles and salads are just the beginning of the hearty meals made with turkey leftovers. What turkey fan has not savored the flavor of a turkey club sandwich the day after Thanksgiving? What better way is there to ward off the freezing temperatures outside than with turkey tetrazzini?

Recipe for Turkey Club Sandwich

Served in both casual and upscale restaurants, a turkey club sandwich is at the top of the list of ways to use turkey leftovers. Turkey club sandwiches are suitable for a special-occasion lunch or can be served for dinner. Add hot soup on the side to make a completely satisfying meal when the weather is cold outside.

Ingredients:

  • 3 bread slices, toasted
  • 2 tbsp. mayonnaise
  • 4 thin slices cooked turkey
  • 2 strips cooked bacon, broken in half (4 pieces total)
  • 2-4 lettuce leaves
  • 2 slices tomato

Assembly Directions:

  1. Apply mayonnaise to one side of 2 toasted bread slices.
  2. On the first bread slice add 2 slices turkey, 2 pieces bacon, 1 slice tomato and a small amount of lettuce.
  3. Top with second bread slice, making sure mayonnaise side is facing up. Add remaining turkey slices, bacon pieces, tomato slice and a small amount of lettuce.
  4. Top with third slice of bread.
  5. Cut sandwich diagonally; turn and cut again to make 4 triangles.
  6. Hold triangles together with toothpicks (plain or party style), if desired.

*Sliced American cheese can be added to the ingredients if desired.

Soups recommended as side dishes: Cream of potato, cream of celery, or tomato. Most any favorite will do.

Turkey Tetrazzini Recipe

A hearty comfort food, turkey tetrazzini is actually a casserole made with cooked spaghetti and cooked turkey. This particular recipe includes Worcestershire sauce. It's baked with a bread topping, so no need to serve bread with dinner. Turkey tetrazzini is a one-dish holiday meal all by itself.

Ingredients:

  • 1 pkg. (8 ounce) spaghetti
  • 2 cups cooked turkey, cubed
  • 4 ounces shredded sharp cheddar cheese
  • 1 can (10 3/4 ounces) condensed cream of mushroom soup
  • 1 medium onion, chopped
  • 1 can (4 ounces) sliced mushrooms, rinsed and drained
  • 1/3 cup milk
  • 1/2 teaspoon Worcestershire sauce
  • 2 cups bread, cut into cubes
  • 3 tbsp. butter or margarine, melted

Cooking Directions:

Preheat oven to 375 degrees F.

  1. Grease a 2 1/2 qt. casserole dish.
  2. Break spaghetti in half and cook according to package directions. Drain and pour into greased dish.
  3. Spread cooked cubed turkey over spaghetti.
  4. In a medium saucepan over low heat, combine shredded cheese, mushroom soup, onion, mushrooms, milk, and Worcestershire sauce. Stir until cheese is melted and mixture is hot.
  5. Pour mixture evenly over spaghetti and turkey in casserole dish.
  6. Drizzle melted butter (or margarine) over bread cubes and toss bread until coated.
  7. Arrange bread cubes over mixture in dish.
  8. Bake uncovered 30 minutes or until crust is golden brown.

Makes 6-8 servings.
