Sweet Potatoes can be made into many interesting types of food.
Who knew you can make salads from sweet potatoes. You can also make sweet potato pancakes and sweet potato biscuits. Versatility truly describes the sweet potato. It can be used in main and side dishes and in desserts. Now try the following recipes. They are unusual and very delicious.
The only way you know these biscuits are made from sweet potatoes is that tell-tale orange color.
Sweet Potato Biscuits
1 pound sweet potatoes, boiled, skinned, and mashed
1 cup brown sugar
¼ cup water
2 ¼ cups Biscuit mix
Preheat oven to 350 degrees.
In a mixing bowl combine all ingredients. This mixture will be much moister than regular biscuits.
Flour a board and roll dough to ½ inch thickness then cut with a biscuit cutter.
Place cut biscuits on a greased or non stick sprayed cookie sheet about 2 inches apart.
Bake for 16 to 18 minutes. These biscuits will be a little flatter than baking powder biscuits but they are just as good. This makes about 1 – ½ dozen.
The next pancakes are more like Latkes. Serve them with sour cream or applesauce or you can douse them with maple syrup.
2 raw sweet potatoes peeled and shredded
2 eggs, beaten
1 tablespoon brown sugar
2 tablespoons flour
½ teaspoon ground cloves
½ teaspoon ground nutmeg
1 ½ teaspoons ground cinnamon
½ teaspoon ground ginger
¼ cup vegetable oil
You need to get as much water out of the shredded sweet potatoes as possible. Place them in a colander placing cheesecloth over top and squeeze the water out. Let them sit about 10 minutes and go back and squeeze them again. Do this 1 more time.
In a bowl combine squeezed sweet potatoes, eggs, sugar, flour and spices.
Place vegetable oil in a large frying pan.
Form mixture into pancakes and fry in hot oil. After 2 minutes or when bottom of pancake is brown, flip to other side.
Drain on paper towels and serve hot. Makes about 12 small pancakes.
The following recipes are salads using sweet potatoes. The first is a fruity salad using pineapple and apples. The second is sort of like Ambrosia. Both are great.
Fruity Sweet Potato Salad
7 medium sized sweet potatoes, cooked, peeled, cooled and cut into ¾ inch chunks (about 5 – ½ cups)
2 Granny Smith or other tart apples, unpeeled and cut into ½ inch pieces.
1 – 20 ounce can pineapple tidbits, drained
½ cup golden raisins
DRESSING:
¾ cup mayonnaise
¾ cup plain yogurt
1 tablespoon curry powder
¼ teaspoon salt
Combine the sweet potatoes, apples, pineapple, and raisins in a serving bowl.
In a small bowl combine dressing ingredients and pour over top.
Toss to coat. Cover and chill 1 hour or overnight. Serves 6 to 8.
Sweet Potato Ambrosia Salad
1 cup brown sugar
½ stick butter
1 tablespoon flour
½ cup orange juice
1 teaspoon grated orange rind
1 teaspoon allspice
2 large Sweet Potatoes, boiled, peeled and cut into cubes
1 cup pecans
½ cup raisins
1 cup small marshmallows
In a sauce pan combine sugar and butter until melted.
Add flour and mix well.
Gradually add orange juice, rind, and allspice.
Let cool slightly.
In a serving bowl combine sweet potatoes, pecans and raisins.
Pour sugar mixture over top and coat well.
After mixture has totally cooled add marshmallows and mix in.
Store in refrigerator. Serves 6 to 8
