Using Leftover Ham
Use sliced or cubed Ham to Make Dishes your Family will Love

What do you do with all that ham left over from the holidays? Hopefully you don’t have too much, but sometimes people tend to overdo to make sure they have enough. After giving leftovers to Aunt Jean, Cousin Charlie, and anyone else who wants them, there is still a pile of ham sitting in the refrigerator. Don’t let it go to waste!
First freeze some for a few weeks later. It will come in handy for a quick meal when you come home from work and don’t feel like doing much. Just get a box of scalloped or au gratin potatoes and some veggies and zap the ham in the microwave – almost instant dinner.
Here are a few other really good recipes for left over ham. Most of them require cubed or chunked ham. If you only have sliced ham don’t let that stop you from making them. Just tear the slices into bite size pieces and proceed as recipe requires.
Leftover Ham Casserole
Kids will love this. It is kind of like macaroni and cheese except you use potatoes with ham mixed in.
- 6 potatoes, peeled and sliced
- 3 tablespoons butter
- 3 tablespoons flour
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups milk
- 2 cups grated Cheddar
- 1 cup leftover ham, cubed or chunked
- 1 cup bread crumbs
- 2 tablespoons butter, melted
- In a Dutch oven cover peeled, sliced potatoes in water, cover and bring to a boil. Boil 5 minutes ONLY. Drain and place in a buttered or non stick sprayed 2 quart casserole.
- In a saucepan place 3 tablespoons butter and melt.
- Add flour, salt, and pepper and stir. Cook over low heat stirring constantly.
- When the mixture thickens, add the cheese and cook until it starts to bubble.
- Pour sauce over the potatoes in casserole.
- Add ham and mix gently.
- In a bowl combine bread crumbs and 2 tablespoons melted butter.
- Sprinkle these over top of casserole and bake in a preheated 350 degree oven for 45 minutes to 1 hour or until bubbly.
- Let sit 5 minutes before serving.
Ham and Swiss Quiche
You can add other things to this quiche like fresh asparagus, spinach, and even bacon.
- 1 – 9” prepared pie crust (make your own or buy a frozen one)
- 1 cup half and half
- 4 eggs, beaten
- 1 teaspoon brown mustard
- 1/8 teaspoon white pepper (if you don’t mind black specs in your quiche just use black pepper)
- 1 – ½ cups cubed cooked ham
- 1 – ½ cups shredded Swiss cheese
- 2 tablespoons grated parmesan cheese
Options: Add if you want
- 1 cup frozen chopped spinach, thawed and well drained
- 1 cup frozen broccoli, thawed, well drained, and chopped
- 1 cup fresh asparagus cut in small sections.
- ½ cup cooked bacon
- Preheat oven to 350 degrees.
- In a mixing bowl combine half and half, eggs, mustard, and pepper. Beat until frothy.
- In pie crust layer ham, Swiss, and any of the options you might wish to add.
- Pour egg mixture into pie crust and sprinkle with Parmesan cheese.
- Bake for 40 to 50 minutes until crust is brown and filling doesn’t wiggle much in the middle.
- Remove from oven and let sit 10 minutes before cutting and serving.
Monte Cristo Sandwiches
Old type Monte Cristos were immersed in oil and fried. This is a little healthier (not much) but once a year it should be ok if you don’t have a life threatening disease that requires no fat in your diet.
- 12 slices firm white bread (Italian is good)
- Prepared mustard (Dijon preferred)
- Sliced cooked ham
- Sliced Swiss cheese
- 2 eggs
- ½ cup milk
- Salt and black pepper to taste
- 3 tablespoons butter
Optional: sliced cooked turkey
- Spread each slice of bread with mustard and make 6 sandwiches using ham, cheese, optional turkey.
- Break eggs in a pie plate and whip with a whisk. Whisk in milk, salt, and pepper.
- Melt 3 tablespoons of butter in a skillet.
- Dip whole sandwiches in egg mixture and place in skillet.
- Grill until golden brown on both sides and serve.
NOTE: If you don’t like mustard use mayonnaise.
Enjoy your ham leftovers. Next year you just might not give as much away so you can make these leftover recipes again.
