A warm comfort food in the winter or something to add to the picnic basket in the summer, banana bread is always a welcome treat.

As banana bread bakes, it sends a warm and sweet smell floating through the house. In the morning, that wonderful smell may wake sleeping noses with the temptation of a special breakfast. In the afternoon, it may be the sign of an after-school snack to get excited about. At night, it may be the promise of the perfect food to eat before bedtime as it soothes tired minds towards dream land.

In addition to being a great treat at home, banana bread is also wonderful for sharing with friends. It is a common bake sale item, easy to bring to a potluck, a nice welcome for a new neighbor, or a compliment to an afternoon talk with an old friend.

From the rich and inviting smell to the moist texture and comforting taste, banana bread is a food that fills the belly and the heart.

Vegan Banana Bread Recipe

Ingredients:

  • 4 very ripe bananas
  • 1 1/2 cups brown sugar
  • 1 1/2 cups granulated sugar
  • 3 Ener-G "eggs" (or other vegan egg substitute)
  • 1/2 cup water
  • 1/2 cup rice or soy milk
  • 1/2 cup vegetable oil
  • 3 1/4 cups flour
  • 1 cup old-fashioned oats
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp cinnamon (or more, if desired)
  • pinch of salt
  • 1 cup of walnuts or vegan chocolate chips (optional)

Directions:

  1. Preheat oven to 350F.
  2. In a large bowl, mash the bananas with a fork or electric mixer until they are of a pudding-like consistency.
  3. Add the sugars, egg substitute, water, rice or soy milk, and vegetable oil. Mix with a spoon or electric blender until all ingredients are blended together.
  4. Add the flour, oats, baking soda and powder, cinnamon, and salt. Continue mixing until all ingredients are again blended together.
  5. If desired, fold walnuts or chocolate chips into the batter.
  6. Evenly dividing the batter, pour it into two greased bread pans, each 9x5x3.
  7. Bake for 65 minutes, or until a knife inserted into the center of the loaves comes out clean.
  8. Let the bread cool in the pans for 10-15 minutes, then remove the loaves from the pans to finish cooling.
  9. Serve warm or cool. May serve with vegan margarine, or with margarine and dusted with cinnamon and sugar.
  10. Share and enjoy!

Note: It is possible to use the base of this recipe to make pumpkin or apple bread. To make pumpkin bread, use 1 15-oz can of pumkin in place of the bananas. To make apple bread, used 1 cup of minced apple (including the skins) in place of the bananas. All three kinds of bread are moist and are a delight to have at any time of the year, or to have in association with a special day.
