This is a simple lasagne recipe which requires minimal preparation, is very healthy as it contains five different vegetables, and has cheap, simple ingredients.
The credit crunch may be curbing peoples shopping budget, but there are numerous cheap and healthy dishes on offer such as this vegetarian lasagne. It is much easier to prepare than a normal lasagne as the white sauce does not involve all the usual strong arm work as it is simply a mixture of crème fraiche, pepper and cheese.
Vegetarian Lasagne Recipe
To feed four have the following ingredients:
1 onion
1 large carrot
2 celery sticks
1 clove of garlic
1 pinch of basil
1 tin of chopped tomatoes
100g of puy lentils
Red wine
2 tablespoons of tomato puree
1 vegetable stock cube
250g of grated cheese
200g of low fat crème fraiche
100ml of milk
Lasagne pasta sheets
Sea salt and ground pepper
Olive oil
Lasagne Flavour Base
Firstly, heat some oil in the base of a large cooking pot.
Finely chop the onion, garlic and basil and add them to pot.
Gently fry the vegetables and season with salt and pepper.
Next chop the carrot and celery sticks and add them to the pot.
Add a small amount of red wine to the pot and allow the alcohol to boil away.
Season the vegetables with salt and pepper and stir.
Then cook everything together with the lid on until the vegetables soften. This may take about ten minutes.
Lasagne Tomato Sauce
Next add the tin of tomatoes, the stock cube, the lentils and the tomato puree to the pot.
Stir it all together with the vegetables and replace the lid allowing to cook over a moderate heat. Boil some water in the kettle.
After five minutes or so, remove the lid and add a small amount of boiling water – just enough to cover the mixture -, as the lentils will have absorbed most of the moisture from the sauce.
Replace the lid and allow to cook for around 15 minutes.
Lasagne White Sauce
Meanwhile add the crème fraiche, the milk, half of the grated cheese and some pepper to a bowl. Mix this together with a spoon until the ingredients combine to form a smooth white sauce.
Pre - heat the oven to 200 degrees.
Lasagne Layers
When the sauce is ready, take a lasagne baking dish and add a layer of the lentil mixture to the bottom. Cover with lasagne pasta sheets, and then add half of the white sauce. Tilt the dish and allow the sauce to cover all of the pasta.
Repeat this process once more, adding the rest of the white sauce on top and cover with the remainder of the grated cheese.
Place in the oven and allow to cook for around 20 minutes or until the top is nicely browned. Serve with salad and garlic bread.
