Vegetarian Toad in the Hole

A Milk and Meat Free Classic British Recipe

This a delicious vegetarian variation of a British culinary classic using soy milk and veggie sausages that serves 2-3 and takes 90 minutes to prepare and cook.

The important thing with this recipe is to follow strictly the instructions for the batter mix if you want it to rise properly. Remember that the oven must be hot, hot, hot.

Ingredients

  • 150g Plain flour
  • 200-300 ml Unsweetened Soy Milk
  • 2 large eggs
  • 6 Vegetarian Sausages
  • 1 tablespoon of vegetable oil
  • Salt and Pepper
  • Dried mixed herbs

Getting started

Pre heat the oven to 230C/ 210C Fan/Gas 8.

Vegetarian Soy Milk Batter Mix.

  1. Sift the flour into a large bowl and season with salt and pepper. (You can use self raising flour as an alternative but if you do then don’t let the mix stand as it will tamper with the raising agent in the flour.)
  2. Make a well in the centre of the flower and mix in the eggs. Once you’ve got a very thick and hard to work paste whisk in the soy milk a bit at a time. I like my final mix to be the consistency of thick paint.Once that’s done you can add some extra goodies to give it an original touch. Some add thyme, some add mustard. I add a dash of vinegar and some dried mixed herbs.
  3. Let the mixture stand for 30 minutes to an hour. This helps it rise.

Preparing the Baking Tin

About fifteen minutes before your batter mix is ready to go, place a baking tin in the oven (with the oil in it). It needs to be smoking hot if you want your hole to rise properly. And don’t go overboard with the oil. 1 tablespoon is enough.

Vegetarian Sausages

  1. Once you’ve let your mix stand and your oil is up to temperature you can add the sausages. Unlike the non vegetarian version of this dish the sausages will not need to be pre cooked. They can go straight into the baking tin (they must be defrosted though). My tip to keeping the oil hot during this process (as you’ll have to remove the baking tin from the oven to add the sausages) is turn the hob on and place the baking tin on it.
  2. Put the sausages in (the amount depends on the size of baking tin but I use 5-6) and then pour your batter mix around the sausages. It might spit when you first add the sausages in but once you’ve added the batter mix you’ll be fine.
  3. Get it back in the over as quickly as possible and cook it for 20-25 minutes until it’s fully risen and is a golden brown in colour.
  4. Remove and serve.

Sounds tasty! I'll have to give it a try with an egg replacer to make it vegan and low in cholesterol.
