Add all ingredients to medium bowl. Season with salt and pepper. Toss to blend. Cover and chill for at least 30 minutes. Serve with salty chips or as a side dish to grilled shellfish. Watermelon and Tomato SaladIngredients
In a large bowl, combine the watermelon, feta, and onions. Salt and pepper to taste. Serve on crusts of bread for a light summer bruschetta, or simply as a side salad. Watermelon GazpachoIngredients

Add tomato to vinegar, olive oil and salt, and stir to mix. Brush watermelon steaks with a small amount of olive oil. Place on medium grill for one minute each side until a slight gristle forms on the edges. Top each steak with a slice of Feta cheese, some of the tomato mixture, salt and cilantro.
