Yes, watermelon… It’s not just for sorbets and smoothies.

This season watermelon recipes are out in abundance. At first, one might do a double take when seeing a recipe for watermelon soup, or watermelon on the grill. But one would also have to admit that trying anything new with this universally-pleasureful ingredient would be worth its weight in... well, watermelon.

Gazpacho is a very popular dish in the hot summer, and what would make more refreshing gazpacho base than watermelon? Here is a great recipe that is sure to please all parties. Also included are a fun and easy watermelon salsa recipe, a recipe for grilled watermelon with Feta (because you've just gotta try it!) and an easy watermelon summer salad.

Fresh Watermelon Salsa

Ingredients

  • Fresh juice of 1 lime
  • 2 cups watermelon, seeds removed, cut into small pieces
  • 1 cup cucumber, meat only, cut into small pieces
  • 1/4 cup diced onion
  • 2 tablespoons minced fresh cilantro
  • 2 teaspoons minced seeded jalapeño peppers
  • 1 teaspoon sugar

Add all ingredients to medium bowl. Season with salt and pepper. Toss to blend. Cover and chill for at least 30 minutes. Serve with salty chips or as a side dish to grilled shellfish.

Watermelon and Tomato Salad

Ingredients

  • 3 cups 2-inch chunks watermelon, seeded
  • 1 cup crumbled feta cheese
  • ¼ cup green onions, diced
  • 1 tablespoon olive oil
  • salt and pepper to taste

In a large bowl, combine the watermelon, feta, and onions. Salt and pepper to taste. Serve on crusts of bread for a light summer bruschetta, or simply as a side salad.

Watermelon Gazpacho

Ingredients

  • 1 3-pound seedless watermelon, diced (about 5 cups)
  • 1 small cucumber, peeled, seeded, diced
  • 1 medium-size red bell pepper, seeded, diced
  • 1 medium-size yellow bell pepper, seeded, diced
  • 1 small jalapeño pepper, seeded, minced
  • 3 cloves garlic, minced
  • 1/2 red onion, diced
  • 1/4 cup finely chopped fresh mint
  • 3 tablespoons fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1/4 teaspoon salt

Puree 4 cups watermelon in blender until smooth. Transfer puree to large bowl. Add remaining 1 cup diced watermelon and remaining ingredients; stir to combine. Cover gazpacho and refrigerate until cold.

Grilled Watermelon Steaks with Tomato Salsa and Feta Cheese

Ingredients

  • 1 watermelon, cut into 4x2x2" steaks, seeds removed
  • Feta cheese, sliced
  • 3 tomatoes, diced
  • 1 tablespoon sherry vinegar
  • 3 tablespoons olive oil
  • Salt
  • Fresh cilantro

Add tomato to vinegar, olive oil and salt, and stir to mix.

Brush watermelon steaks with a small amount of olive oil. Place on medium grill for one minute each side until a slight gristle forms on the edges. Top each steak with a slice of Feta cheese, some of the tomato mixture, salt and cilantro.
