Ways to Fix Hamburger Meat for Supper

Cook Ground Meat Stroganoff and Pot Pie Casserole

There are many things to do with the extra pound or so of ground meat in your fridge. Here are some delicious ideas of what to do with that hamburger meat for supper.

When buying ground beef or similar meats, many people use the meat they need in that day's meal, freezing up the rest for later. Creamy stroganoff and pot pie casserole can be made with that extra pound or so, and will each be eaten eagerly at supper.

Stroganoff Ingredients

  • about a pound of ground meat (can be any kind you have: beef, turkey, pork, venison, etc.)
  • 1 clove of garlic (or similar garlic product)
  • 1/4 cup oil or butter
  • 1/2 cup minced onion
  • 1 teaspoon of salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon paprika
  • one 8-oz can of mushroom pieces (or fresh mushrooms)
  • one can creme of chicken or mushroom soup
  • 2 tablespoons flour
  • 1 cup sour cream
  • several sprigs of parsley or sprinkle-type of parsley for garnishing

Stroganoff Directions

  1. Prepare or lay out rice, potatoes or noodles so the stroganoff can be served over a bed of whatever you have on hand that day.
  2. Saute onion in hot butter or oil till golden in large skillet or pan.
  3. Add ground meat, garlic, flour, salt, pepper, paprika and mushrooms.
  4. Mix and cook for about five minutes.
  5. Add soup and simmer uncovered for ten minutes.
  6. Stir in sour cream.
  7. Sprinkle with parsley.
  8. Serve over bed of rice, mashed potatoes, or noodles as desired.

Another option for what to do with ground meat in your fridge is Pot Pie Casserole. Remember to look in your pantry and fridge to see what you have on hand before going shopping. Often a little bit of tomato sauce, veggies, or other leftovers will hit the spot in a casserole.

Pot Pie Casserole Ingredients

  • Around a pound of precooked, drained ground meat (any kind you have or prefer)
  • About a cup of chopped onion (one large onion as desired)
  • 1 can cream of mushroom or chicken soup
  • One can of ready-to-cook biscuits or leftover dough from last night
  • 1/4 cup milk (fresh or powered)
  • 1/4 cup catchup or tomato product from fridge
  • One 8 oz. package of softened creme cheese
  • 1 teaspoon salt (or salt to taste, can use Dash or other salt substitute)
  • 1 can ready-to-cook biscuits or leftover dough from last night
  • Olives, mushrooms, peppers, celery (look in your fridge!) as desired

Pot Pie Casserole Directions

  1. Brown ground meat and saute onions in their juices. Then drain.
  2. Gently mix wet ingredients, using microwave if needed to soften creme cheese first.
  3. Add dry ingredients, mixing well.
  4. Arrange in uncovered casserole or square dish with biscuits around the outside edge.
  5. (Can top with mashed potatoes instead of biscuits for Shephard's pie effect.)
  6. Cook in medium oven (about 375 degrees) till bread is browned, around 20 minutes.
  7. Serves the whole family of six or so.

So the next time you have a pound or so of any ground meat, try making stroganoff or pot pie casserole and you won't even need to spend more on a hamburger helper. Feel free to use what you have in order to avoid waste, save money and avoid extra unnecessary trips to the store. The family will put these meals on their request list.

These meals look great and actually taste good too. I didn't know about some of these foods and its great to see them and taste them and keep trying to get it to taste its best. You got great cooking ideas and keep the good tastes coming.
