Ken’s Famous Onion Rings:
Difficulty: Easy
Serves: One onion serves two or three people depending upon size.
Prep Time: Ten minutes
Cook Time: Seven minutes
Ingredients:
Vegetable Oil
One large white or yellow onion
Four cups of beer
Four cups of plain white flour
Two teaspoons of garlic powder
One teaspoon paprika
Salt
Execution:
Fill a large deep pot with about three or four inches of vegetable oil. Place a thermometer into the oil and preheat between 350 to 370 degrees F.
While the vegetable oil preheats, peel the onions and cut off both ends; discard the cuttings into the compost or yard waste bin.
Next, use a sharp knife to cut the onion into slices. Cut the onion into slices that correspond to the desired thickness of the resulting onion ring.
In a large mixing bowl, combine flour, beer, paprika, and garlic powder; mix well until all ingredients are thoroughly integrated.
Separate the sliced onions and put aside those sections that are too small to be cooked. Depending upon preference, one may decide to batter and fry the small sections of onions for a bite sized onion ball.
Once the oil has preheated, begin dunking the raw rings of onion into the beer batter and then placing them into the hot oil. Important: The oil should bubble around the onion ring as it floats to the top of the oil. If this does not happen, the thermometer gave you an incorrect reading and the heat of the oil must be increased before any more onions are added to the pot.
Keep adding onion rings to the hot oil until all of the available space has been taken up in the pot.
Use a wooden utensil to flip the onion rings and ensure proper cooking. The onion rings should be removed from the oil and set on a stack of paper towels when they are golden brown and crispy. The paper towels will absorb all of the excess oil from the onion rings. Salt the onion rings immediately after taking them out of the hot oil and serve immediately. Yum Yum!
