Quick Side Dish Recipes to go with Spicy Meat or Fish Sausages

These side dishes are the best accompaniments to grilled or fried Ysabelle's Spicy Homemade Meat or Fish Sausages. Easy-to-follow recipes, vibrant, with lots of pizzazz!

The sausages are delicious served with warm pita bread, fluffy couscous, steamed rice, hummus, and garlicky sour cream. They also go well with all kinds of vegetable salads and salsa combination. Though it is also possible to make one's own pita bread and hummus, the ready-made authentic versions from restaurants serving Middle Eastern or Asian cuisine or selected grocery stores are fine. The neighborhood delicatessen would also be a good source for condiments or accompaniments to the sausages, including mixed salads, salsas, pickled olives, cheeses, dips, and other side dishes. But if one has a bit more time, the homemade salsa and garlicky sour cream recipes given below are absolutely no-fuss.

Ysabelle's Crunchy Mixed Vegetable and Fruit Salsa

Ingredients:

  • 2 large ripe tomatoes, washed, de-seeded and diced
  • 1 medium-sized salad cucumber or Japanese cucumber, washed and diced
  • 1 large carrot, washed and diced
  • 1 green chilli, mild variety, washed, de-seeded, and sliced crosswise
  • 1 medium-sized yellow or green bell pepper, washed, de-seeded and diced
  • 1 small half-ripe, still firm-to-the-touch mango, washed, peeled, and flesh diced
  • bunch of fresh coriander, washed
  • sprigs of mint, washed
  • freshly-ground black pepper and salt to taste
  • juice of one large lime or small lemon
  • some extra virgin olive oil and honey
  • Utensils needed: deep bowl, wooden mixing spoons and a pair of kitchen scissors

Procedure:

  1. Wash the vegetables thoroughly under running water, especially the coriander and mint, to remove grits that may have clung to the leaves.
  2. Pare the carrot, de-seed the tomato, chilli and bell pepper. Dice.
  3. Peel the mango and remove all the flesh. Dice.
  4. Put the diced vegetables and fruit in the bowl.
  5. Using kitchen scissors, snip off the coriander and mint leaves right over the salsa mixture.
  6. Add to the mixture the lime or lemon juice, half a teaspoon of honey and some extra virgin olive oil. Season with freshly-ground black pepper and salt. Toss well.

Ysabelle's Homemade Garlicky Sour Cream

Ingredients:

  • a tub of store-bought fresh unsweetened dairy cream or plain yogurt
  • juice of two small limes or small lemon
  • 2 cloves of garlic, peeled and finely mashed (or use a teaspoon of ready-made, store-bought garlic paste)
  • salt to taste

Procedure:

  1. Squeeze juice from limes or lemon and pour it into the cream or yogurt in the tub.
  2. Add the mashed garlic or garlic paste into the cream-juice mixture.
  3. Sprinkle with some salt. Stir.
  4. Let stand for 15-20 minutes before serving.

How to Serve Ysabelle's Spicy Homemade Meat or Fish Sausages

One way of enjoying the sausages is by removing one from its skewer and wrapping it with a warm whole pita bread or putting it in a pita pocket. Smother it with some homemade garlicky sour cream or yogurt. Serve with the crunchy vegetable and fruit salsa and hummus. Also good with couscous and steaming rice.
