Jan,

I don't know if you've tried it this way, but if you like shrimp as well, you could make a Shrimp and Scallop Stew which you could serve over white rice.

You could combine them with other types of seafood and make a seafood version of the Spanish paella.

I hope these two ideas will get you going. Let me know if you would like the recipes for both of these and I'll post them here.
