Hi Michael! Your Spring Vegetarian Rice Recipe looks great and I plan to try it. As a vegetarian, though, I never use chicken broth. (And as the Suite101 Birds writer, I have to stick up for my friends!) It's hard to find a substitute that isn't too salty - do you have a suggestion?

Joy and Rosemary,

In place of the chicken broth, you can use a low-sodium canned vegetable broth, or if you have the time and want to try making your own, you can use the same quantity of homemade vegetable broth. If you would like the recipe for the vegetable broth, let me know and I'll post it for you in the Recipe Swap area.
